Never leave home and go to work without eating something for breakfast. You need a healthy morning meal to give you energy, launch the day off right and curb your appetite. Not eating breakfast sets you up to overeat later in the day. "You want to aim for a breakfast that combines good carbs and fiber with some protein," says Erica Giovinazzo, MS, RD, a nutritionist at Clay Health Club and Spa, in New York City. Leftovers n Egg
How about using last night's leftovers.Spoon out some leftover roasted veggies, potatoes, or meat into a container, top it with a cracked egg, and heat in the microwave until the egg white is cooked through 30 to 45 seconds. Take it to another level and sprinkle with some freshly grated parmesan cheese.
Fancy Yogurt
Take a 7 oz container of plain Greek Yogurt. Greek yogurt is high in protein, which keeps you full. A typical 6-ounce serving has 15 to 20 grams, (according to U.S. News and World Report) the amount in 2 to 3 ounces of lean meat. That makes it particularly appealing to vegetarians, who sometimes struggle to get enough of the nutrient. An identical serving of regular yogurt, however, provides just 9 grams, meaning you may start to feel hungry sooner. You can use regular yogurt if you prefer, but it will be sweeter, and you won't get the benefit of the extra protein. Add 1 Tbsp. Raspberry jam or whatever type of jam or jelly you like, throw in 1 tsp. Honey and 2 Tbsp. of chopped toasted almonds or any nuts you prefer. Mix all the ingredients up in the yogurt container. Grab a spoon and out the door you go! ---- I opt for this recipe without the jelly and use twice as much honey. Try it both ways and let me know which way you like better.
Margherita Breakfast Pizza
Turn on your broiler. Top one-half of the English muffin with a generous slice of tomato and then sprinkle with a 1/4 cup of shredded mozzarella. Place it on a baking sheet, along with the other half of the English muffin. Slide under the broiler. Broil until the cheese is melted and browned in places. Remove from the oven and add a fried egg for some protein. Put on some fresh basil for that Italian Flavor. Top with the other half of the English muffin.
Two Minute Scrambled Eggs
I never realized you could microwave eggs like this. This Recipe is an enormous time-saver. Coat a 12 oz. microwave safe coffee mug or dish with cooking spray. Add 2 eggs and 2 tablespoons of milk and beat till blended. I like to stir in some chopped fresh spinach, broccoli or whatever vegetable I have on hand. Microwave on HIGH for 45 seconds; stir. Next microwave again until eggs are almost set, 30 to 45 seconds longer. Top with cheese and season with salt, pepper, and any herbs you choose to use.
5-minute fruit smoothie
This list would be incomplete without at least one breakfast smoothie. A meal in a glass for people in a hurry. You can make it fast, and it's nutritious.
You'll need 1/2 cup of frozen mixed berries (unsweetened), 1 cup of frozen unsweetened strawberries, 1 cup of orange juice and 1/2 cup of non-fat Greek Yogurt. Place all the ingredients into a blender and use the pulse setting a few times. You will have to stir it around with a spoon a few times because this smoothie is thick. You can substitute the berries for any kind you like so feel free to experiment with different flavors.
